Borscht (Russia)

Borscht is a sweet and sour soup with ancient origins in Eastern European, and especially Ukrainian, cuisine, primarily made with red beets. Typically prepared with broth, beets, cabbage, potatoes, and carrots, this hearty soup gets its characteristic red color from the beets and is usually served with sour cream (smetana) on top.
